Mobile restaurants are the hottest things on four wheels these days. If you haven’t tried the most eye-catching of our Twin Cities options, the Magic Bus Café, a big purple school bus worthy of a hippie road trip, you should. Why? Because chef Chris Lockyear, who runs and owns it with his wife, Cathy, and her twin sister, Chrissy Russell, has serious cooking credentials, having put in years as a sous chef at such legendary restaurants as Bobino and D’Amico Cucina. Another reason to seek out this hippie bus is Lockyear’s hot dogs (like the simple one with flamingo-pink, grated-beet sauerkraut, your choice of a local grass-fed Thousand Hills Cattle Company hot dog, a Boar’s Head wurst, or some Smart Pup tofu. ) They are marvelous: salty and snapping, cradled perfectly in whole-wheat buns from St. Agnes Baking Company. Finally, and most of all, go because summer is short!
