Cossetta’s Is Opening A 230-Seat Sit-Down Restaurant!

What’s the biggest food news in St. Paul for 2012? I think it’s got to be the forthcoming, gargantuan new sit-down restaurant which will grace the top of Cossetta’s.

Yes, that Cossetta's. The well-loved, hundred-year-old St. Paul institution is undergoing a big renovation right now, and owner (and fourth-generation Cossetta) Dave Cossetta told me a little about it: A rooftop full-service restaurant, with 100 indoor seats, and 130 more outside on a patio. This restaurant will serve things from Cossetta’s new specialty market (where they’ll be making their own salumi) and their new specialty Italian bakery (including authentically Italian classic ricotta and raisin pie—Ricotta e Uvetta alla Veneziana—and authentically Italian-American delights, like seven-layer cookies), as well as Italian entrees and wines.

What will those entrees be? What will they cost? What’s the name of the new place? All will be revealed in due time, Cossetta told me, adding that he figured they’d be open next June. Until then, fans of the old and classic Cossetta’s are advised to rest easy, the counter-service classic part of the business isn’t going anywhere, though there will be more seating when they’re done, and more parking.
