Penfolds Wine Dinner at The Dakota

The Dakota Jazz Club & Restaurant has a new team of executive chefs, Derik Moran and Kristin Tyborski, and are introducing them next week at a six-course dinner with wine pairings. Penfolds Wine Dinner is Wednesday, March 14, starts at 6:30 p.m., and here's a preview of their menu:

Monkfish Two-Ways
Monkfish side, monkfish liver, compressed apple, musago, black trumpet, and china rose radish
Served with Thomas Hyland Chardonnay, Cool Climate, 2010

Spring Pea & Ramp Salad
Sake lees, grilled ramp, spring pea flan, ramp oil, sun daisy, and agrumato
Served with Thomas Hyland Riesling, Adelaide, 2008

Ostrich Loin
Seared ostrich loin, veal bordelaise, pistachio purée, gratin bianco, cherry foam, and ruby red chard
Served with Bin #2 Shiraz-Mouvedre, 2010

Short Rib
Smoked potato, foie+lobster hashbrown, black truffle, fine herb hollandaise, herb gelee, and celery
Served with Thomas Hyland Cabernet-Sauvignon, 2009

Spiced Pear
Maple marshmallow, gruyere popcorn, caramel powder, and sea salt
Served with Club Reserve Aged Tawny Port
