Cedar Summit’s New Half and Half

Just in time for the holidays, Minnesota’s own 100% grassfed, organic dairy is now producing half and half.

This week, Cedar Summit Farm announced that they have added “half and half” to their line of products. Consisting of half cream and half milk, half and half blends more easily with coffee than heavy cream, and it’s less expensive, both of which were appealing to Cedar Summit’s customer base, according to Ryan Crum, Cedar Summit’s business development and marketing manager.

The Minar family founded Cedar Summit Farm in 1926, and in 1989, Dave and Florence Minar transitioned it from a confinement dairy to a grazing operation. They built their on-farm dairy processing plant in 2001. Today, the Minar family manages Cedar Summit’s 140 milking cows and dairy processing operations in New Prague, Minn. They are proud to be a 100% grassfed, certified organic dairy. As environmental stewards and sustainable producers, they received recognition as the MOSES Farmer of the Year in 2007, and they’ve been called a Zero-Waste hero by Eureka Recylcing for their use of reusable glass bottles, which can be spotted sparkling on shelves in co-ops and restaurants throughout the Twin Cities.

“There are a lot of good organic dairies out there, and that’s great, but we take it to the next level by feeding our cows grasses every single day of the year, which means our milk is high in Omega 3 fatty acids and CLA (conjugated linoleic acid)” said Crum. “We really care about our animals. I swear the Minars take care of these animals better than they take care of themselves sometimes.”

Just in time for the holiday season, Cedar Summit’s new half and half is available in area co-ops, and they’re looking to making it available in coffee shops as well. Look for it at Eastside Food Coop, Fresh Seasons Market, Linden Hills Co-op, Wedge Natural Foods Co-op, Spiral Natural Foods, and Oxendale's Market. They also sell their products at their farm store, located near the intersection of Scott County Road 2 and 15, just North of New Prague.
