Surly blazed trails with its experimental brewing style—and now it does so again with a $30-million brewing complex, complete with drinking and dining facilities. The massive new beer hall seats 275 and offers views of brewing tanks through a wall-size window. Chef Jorge Guzman, formerly of Solera, created an ambitious beer hall menu with dishes ranging from charcuterie to barbecue to fried chicken designed to pair perfectly with Surly’s beers, from Bender to Furious.
