This cozy little shop has undergone a major transformation since it was Lee & Dee’s Barbecue, just off the corner of Selby and Victoria Avenues in St. Paul. Serving ramen that is made without beef or pork, the owners wanted the restaurant to be inclusive of all cultures (and dietary restrictions: a selection of dishes can be made vegetarian, vegan, or gluten-free). With that simplicity in mind, it’s remarkable how complex these flavors are and reassuring how comforting each slurp can be. •161 Victoria St. N., St. Paul, 651-340-4955, toriramen.com
