NEW CHEFS HAVE LANDED at a few of my favorite restaurants. Stephen Trojahn, who headed the 21 Club in New York City, is now overseeing the kitchen at Cosmos with Khanh Tran, formerly of Auriga, as pastry chef. While executive chef Joan Ida is in Hong Kong, Shelagh Connolly has taken the reins at Triä in North Oaks.
Rino Baglio of Pazzaluna in St. Paul has been invited to compete at the International Culinary Expo National Championship in Italy, which begins February 25. Baglio, the executive chef, will be creating a main course dish for a Mediterranean meal. Good luck, Rino!
Larissa LeMay, owner of Elegant Confections, has opened Bellaria Bakery (4430 Excelsior Blvd., St. Louis Park), named after the Latin word for dessert. Stop in on your way to Trader Joe’s to sample her scones, croissants, pastries, tortes, and truffles.
Coffees-for-a-cause help you do your good deed for the day before you’re awake enough to know it. Now through March 4, a portion of the proceeds from Caribou Coffee’s Northern Lite Lattes helps fund construction of the proposed Minnesota Planetarium and Space Discovery Center, which would sit atop the Central Library in downtown Minneapolis. CityKid Java, roasted locally and available at Kowalski’s and Cub Foods, not only tastes good but sends 100 percent of profits to Urban Ventures, a local nonprofit that works with low-income families in south Minneapolis.
It’s not quite time to gear up the grill, but you can still get an early whiff of the charcoal. Market Bar-B-Que’s new smoked chicken wings are divine, as is the cheesecake from Carnegie Deli, which is shipped fresh from the Big Apple when it’s available.
