In light of the recent restaurant news regarding Stewart & Heidi Woodman's new healthy-eating, vegetarian and vegan restaurant, it seems apropos that we share this cookbook that recently hit Dara's desk.

I use mixed greens and romaine for a quick winter citrus salad - combine sectioned citrus like naval oranges or blood oranges, red onion sliced thin, croutons, and vinegrette dressing.

I use butternut squash more than any other vegetable. I love it roasted and tossed in curries but I think my butternut squash bisque (vegan!) is the most popular rendition.

We use dinosaur kale the most. Chop it up and sauté in a little olive oil, garlic, salt & pepper. Squeeze in a little fresh lemon juice at the end. And for a special treat, add pine nuts and/or parmesan cheese.

I definitely use butternut squash constantly. Risotto, vegan macaroni and cheese, soup, hashes, and more! It fills me up & is comfort food while still being full of vitamins.
