Elizabeth’s Pick: Free-Range Turkeys from Wild Acres

I have it easy on Thanksgiving. Between my mother and my mother-in-law, the cooking, baking, and hosting is covered. All my husband and I have to do is bring wine (this year: a sparkling Vouvray from Cork Dork Wine Co.) and the bird. Last year we had our first free-range turkey from Wild Acres and it was turkey like we’ve never tasted (that, and we always grill it, which adds a rich, smoky flavor). Once you try a farm-fresh Wild Acres bird, you’ll never look at frozen Butterballs the same way. Pat Ebner has been supplying some of the Cities’ finest restaurants and meat counters with birds since the 80s—long before the phrase “free-range” became a popular marketing ploy. He raises his poultry in Pequot Lakes with zero chemicals, natural feed, and plenty of sunshine, then delivers them from farm to table in less than 24 hours.
