Land of 10,000 Cakes

Robin Martin is Minnesota’s own Ace of Cakes: A fondant genius who can make anything out of icing. Even Leech Lake.

“I made my name in the wedding-cake industry as the person who would say yes to things that no one else would say yes to,” says Robin Martin, the force behind Gateaux in Plymouth. We caught up with Martin fresh from her appearance on the Food Network Challenge, where she baked a Green Eggs and Ham cake. (Look for the re-runs, it was a humdinger.) But could Martin say yes to a cake celebrating cabin-opening season? Yes! However, please note that Martin informs us the hot trend now isn’t lake cakes, but traditional ones featuring replicas of the bride and groom’s dogs. “I can really crank out frosting pugs now,” laughs Martin. If you want your own pug immortalized, save your pennies and book early: Gateaux only does three wedding cakes a weekend. Most serve hundreds and start around $1,200.
