Baking culture is on the rise

Considering the Twin Cities’ milling history, it’s no surprise that we have a strong bread-making culture and are home to numerous world-class bakeries. Local bread pros have all the classics down—baguette, levain, challah—but they also know how to get creative, experimenting with recipes that might eschew gluten or incorporate beer (or its byproducts) from metro-area breweries. For members of the amateur baking community, the third-annual Mill City Farmers Market bread contest takes place on September 21. Zoë François and Jeff Hertzberg, of Artisan Bread in Five Minutes a Day fame, will do a baking demonstration, and then a panel of judges, myself included, will select winners in the Quick Breads and Yeasted Breads categories. Start flexing those kneading muscles.
