Drink of the Month: The Rosemary Fitzgerald

A refreshing summer cocktail featuring Metropologin from Loon Liquors, a grain-to-glass distillery in Northfield

Loon Liquors is a 100 percent organic, grain-to-glass distillery based in Northfield.

The Rosemary Fitzgerald features our Metropoligin—a wheat-and-barley-based gin that contains 10 botanicals. It pairs beautifully with the rosemary in this cocktail, while the lemon adds brightness, accented by the spice of our house-made allspice bitters. 

2 oz. Metropoligin Gin
¾ oz. rosemary simple syrup

½ oz. fresh lemon juice
8 drops allspice bitters
1 rosemary sprig 

Combine all ingredients in an ice-filled shaker. Shake vigorously for 15-20 seconds. Strain into a chilled coupe or cocktail glass. Roll the rosemary sprig between your hands to aromatize. Garnish finished cocktail with aromatized rosemary sprig.

*Boil 1 cup water with 1 cup sugar and stir until dissolved. As it cools, infuse with ¼ cup dried rosemary, then strain and chill.
