Lifelong friends Clyo Howard and Beryl Wells Hamilton recently launched Meadowlands Chocolate, becoming the state’s only bean-to-bar maker since Rogue decamped for Massachusetts. Meadowlands is crafted in northern Minnesota using just two ingredients: organic cane sugar and cacao beans from South America. As with fine wines, different regions and soils produce beans with distinct flavor notes—specific knowledge of which is best acquired by sampling all of the single-origin bars.
