Don’t tell Wisconsin, but Foxy Falafel chef and owner Erica Strait did the impossible and found a way to improve upon the deep-fried cheese curd. Squeaky fresh curds from Ellsworth Farms arrive to her food truck, as well as to the kitchen of her St. Paul restaurant between Midway and Prospect Park, and get tossed in corn starch and fresh dill fronds, a departure from the usual thick batter. They’re naturally gluten free and served with local wildflower honey, a foil to the hot, salty curds. The exterior has that satisfying crunch. Inside, the cheese oozes and stretches.
