It wasn’t long ago that the parent company of Parlour, Borough, and Butcher and the Boar was defiantly, proudly urban. Only in Minneapolis and St. Paul, no interest in going to the suburbs. Post-COVID, that’s changed.
On Monday, Jester Concepts and owner Brent Frederick announced a continued westward expansion for the company. Parlour Bar is opening a new Excelsior location in the basement of what used to be Bull & Wren (and Jake O’Connors before that). Two more concepts, which are yet to be announced, will come to the upper level.
“Excelsior is beautiful and has a vibrant community poised for continued culinary growth,” says Frederick in an official statement. With 1,200 square feet downstairs and 60 seats, Parlour will be an Excelsior hot spot for sure.
Yes, you’ll find that legendary Parlour Burger (you can read the history of that gem in a piece I did a couple months ago). There will be similar stuff on the food menu as the Minneapolis Parlour basement—they’ll have the popcorn with togarashi, bacon, and pineapple, and the dill-brined Chicken Sandwich. Jesse Held, a key part of the early Parlour team, now co-owner at Earl Giles, will help “design the cocktail menu at the Excelsior location and will feature new creative cocktails along with classics,” according to the statement.
The new location should open in the fall (which is soon) and Jester will announce the new concepts in the coming weeks.
