Wisconsin is famous for its cheese, but Minnesota figured out the best delivery system for it. A beef patty is molded with a core of cheddar, pepper jack, or provolone hidden inside. When cooked, the cheese becomes liquid gold, and when bitten, the burger oozes with volcanic goodness. It is a hamburger with a heart of cheese, and it is best served with tater tots, perhaps a wedge salad, and definitely a cold beer. Whether it was Matt’s Bar (where it’s the “Jucy” Lucy) or the 5-8 Club that first served this notorious burger, this much is certain: The belt-busting patty is a Minnesota staple.
