The dining room is layered, textured, and inviting, with warm light and collected details that make it feel storied and familiar from the moment you walk in. The kitchen is led by Chef de Cuisine Tsu-Hung Liu, known to most as Chef BAM. A Culinary Institute of America graduate who trained at The Greenbrier Resort and cooked under James Beard Award winner Nancy Oakes in San Francisco, Liu has crafted a menu built around classics that feel both familiar and worth celebrating. Think wagyu beef tartare, lobster pot pie, pan-roasted walleye, and a signature Belle & Grey burger made with local wagyu. The cocktail program follows suit. Director of Hospitality Tim Niver, owner of Mucci’s and Saint Dinette in St. Paul, is lending his expertise to the opening, while General Manager Matt Truskolaski oversees the guest experience across Belle & Grey and The Hotel Landing as one cohesive, elevated destination.
