Behind the name is a story shaped by family and lake life. The ownership group that built ninetwentyfive into a neighborhood institution is deeply rooted in this community, and their vision for Belle & Grey is an homage to the next generation and the water just beyond its doors. That sense of connection is woven throughout the space. The dining room is layered, textured, and inviting, with warm light and collected details that make it feel storied and familiar from the moment you walk in. Adjacent to the main room is The Library, a more intimate experience that offers whiskey and wine with its own menu and a quiet allure that is already becoming one of the most sought-after seats in Wayzata.

The kitchen is led by Chef de Cuisine Tsu-Hung Liu, known to most as Chef BAM. A Culinary Institute of America graduate who trained at The Greenbrier Resort and cooked under James Beard Award winner Nancy Oakes in San Francisco, Liu has crafted a menu built around classics that feel both familiar and worth celebrating. Think wagyu beef tartare, lobster pot pie, pan-roasted walleye, and a signature Belle & Grey burger made with local wagyu. The cocktail program follows suit. From the Beauty and the Belle to the Espresso Finale, each drink carries the same playful, well-considered spirit as the food.

Director of Hospitality Tim Niver, owner of Mucci’s and Saint Dinette in St. Paul, is lending his expertise to the opening, while General Manager Matt Truskolaski oversees the guest experience across Belle & Grey and The Hotel Landing as one cohesive, elevated destination.
