Exciting news for Wayzata residents and pastry lovers! Jester Concepts has announced plans to open a new Rustica Bakery & Cafe in Wayzata this summer. Taking over the former Wuollet Bakery space, this new location will bring Rustica’s exceptional coffee, artisanal breads, and award-winning pastries right to the heart of the community.
Brent Frederick, owner of Jester Concepts, shared his excitement about the new opening in a recent press release, stating, “When Wuollet Bakery and Penny’s Coffee closed, it left a noticeable gap in the community. We feel there’s a strong demand for Rustica’s offerings and we’re thrilled to provide a new gathering space for the neighborhood.”
The 1,600-square-foot space will have a modern and inviting design, similar to Rustica’s Minneapolis and Edina locations, but with a few fresh updates. Designed by Shea and with construction by Ancoats, a Minneapolis-based firm, the cafe will seat up to 30 guests indoors, plus a sidewalk patio for extra seating when the weather warms up.

Of course, visitors can expect all the beloved Rustica favorites, from expertly brewed coffee drinks to homemade breads and decadent pastries, all crafted by James Beard finalist Shawn McKenzie. While the cafe will start with a menu of sweet and savory treats, the offerings will continue to evolve with time.
This marks Jester Concepts’ first project in Wayzata, as well as its first Rustica Bakery & Cafe location under its ownership. The company also has plans to open additional Rustica locations in the Twin Cities in the coming years.
