Chilango announces leadership transition in the kitchen as Chef Jorge Guzmán steps away

Big changes are underway at Chilango Kitchen & Bar, the bold and vibrant Minneapolis spot known for its modern spin on Mexican flavors. The restaurant has announced that Executive Chef and Partner Jorge Guzmán—a driving force behind its creative menu and local acclaim—is stepping away to begin a new chapter beyond the Twin Cities dining scene.

Guzman’s influence has been integral to Chilango’s identity, with his signature style bringing both depth and flair to the restaurant’s dishes. “It has been an absolute privilege working with Jorge to bring Chilango to life,” says Managing Partner Zach Sussman, who credits Guzmán for helping establish the restaurant’s culinary reputation.

But with one chapter closing, a fresh one is already in motion. Colin Murray, chef-owner of Wandering Kitchen—a catering and private dining venture known for over-the-top presentations and inventive menus—has stepped into the role of Executive Chef. Murray brings not just a wealth of experience but also a playful energy and a vision for Chilango’s next phase.

“Our goal is to be the answer to the question, ‘Where can I go for a fun dinner in Minneapolis?’” says Sussman. “We want to bring back the old Chino Latino vibes—a place where you can have fun, eat dishes you won’t find anywhere else, and enjoy a memorable night out at a great value.”

While Chilango will keep its roots in Mexican cuisine, Murray is already at work on a revamped menu set to debut in the coming weeks. Diners can expect bold new creations layered with his signature flair while still honoring the flavors Chilango is known for.

For regulars and new visitors alike, one thing is clear: Chilango is stepping confidently into its next chapter—and promising plenty of surprises along the way.
