What’s Up

Hope Breakfast Bar has quickly transformed into one of the most sought-after dining destinations in Edina’s Centennial Lakes area. With six locations across the Twin Cities (plus an express spot in Gillette Children’s Hospital) under the umbrella of Purpose Restaurants, the brand—founded by community-driven chef/owner Brian Ingram and his wife, Sarah—has become a beacon of creativity and heart.  Ingram, a chef, restaurateur, and concept developer, has built a reputation for delivering not just meals, but also experiences that bring people together. His newest venture, Salt & Flour Kitchen, debuted at North Loop Green this past fall, further cementing his spot in the culinary landscape.

The Sunrise Chili Crunch Bowl is an opus of flavors: two perfectly cooked eggs, fragrant jasmine rice, house pickles (including pickled carrots—the perfect crunchy addition you didn’t know you needed), spring greens, avocado, and roasted garlic aioli, all topped with a spicy chili onion crisp that adds just the right amount of heat. For an extra savory punch, ask for pork belly bacon on top. The Pork Carnitas Bowl is another standout, featuring slow-roasted carnitas, tender potatoes, seasonal vegetables, cheese, and a rich green chili cream sauce, served with a warm tortilla. The Banana Churro Waffles are also a must. Crispy Belgian waffles with fresh banana, toasted walnuts, cinnamon brown sugar, and a banana cream cheese syrup? Pure breakfast bliss.

More than just a place to eat, Hope Breakfast Bar feels like a joyful escape from the ordinary. The vibrant interior exudes warmth and creativity, much like the dishes it serves. The dining space is an open concept, with light oak furnishings and tables, tall ceilings, gold silverware, and colorful art on the walls (including a portrait of Prince). Whether you’re diving into a savory bowl or indulging in something sweet (which there is a lot of!), Hope offers a welcoming experience that brings a bit of optimism to every bite. Plus, a portion of all sales is donated to support local communities, uniting neighbors to serve those in need—what’s not to love about that?
