A local restaurant pro and a local distillery owner were giving me some serious crap that I’d never heard of JK’s Table in Edina. Have you heard of it?

JK’s is in an office building; if you pull into the parking lot on the wrong side, you’ll be confused and you won’t see it, and it’s received almost zero news coverage. (I found a write-up on their breakfast from 2018 and a 2024 story on the post-COVID survival of restaurants.)
When we walked in at 1:30 p.m. on a Monday, Junko Kumamoto was taking orders and her husband, Hiroshi, was in the kitchen cooking and plating our bento box.
I got the JK’s Bento Box, picking the spicy salmon roll which had nicely seasoned, not overly-sweet rice and abundant bright, flavorful salmon. Saba is a mackerel perfectly seared with just enough oiliness to pull it apart with my chopsticks. It had four tasty beef meatballs, a little seaweed salad, kinpira gobo (burdock root/carrot salad), a couple edamame, and oshinko. The bento box cost about $20, which is reasonable considering the amount of food and the quality.

My friend got a spicy chicken rice bowl which was closer to $13. Also great flavor and freshness.
They’re only open weekdays from 11 a.m.-3 p.m., sort of like a skyway restaurant in an office park. Nothing fancy—just rock solid Japanese food, from bowls and sushi to a couple noodle soups. A husband/wife who’ve been serving office workers quietly, humbly, for more than a decade. We love to highlight the big names, the flashy new spots, but I’m making a point to also shine a light on some of the people just quietly doing the work and making a great life for their communities.
